BBQ Succulent Grilled Goat Leg or Shoulder
Ingredients:

3lb goat leg or Shoulder.
125ml Olive Oil 2 Springs Fresh Rosmary ( Chopped ) 5 Springs Fresh Thyme ( Chopped ) 1/2 TBSP Salt
2 TBSP Fresh Oregano ( Chopped ) 2 TBSP Fresh Parsley ( Chopped ) 1 TBSP Crushed Red Pepper
1/2 TBSP Ground Allspice 2 Spring Onions 125ml Orange Juice 4 Cloves Garlic ( Chopped ) 1 1/2 Limes ( Juiced )
1/2 TBSP Honey 3 Springs Fresh Rosemary
Cooking Instruction:
Chop your ingredients
Step 1: In a mixing bowl, add olive oil, add all your ingredients apart from the Rosemary and meat. Whisking thoroughly as you add each item.
Step 2: Trim and wash your goat meat with water and 1/2 a lime. Poke some holes with a knife all over the goat meat.
Step 3: Tie your goat meat with string to keep it together if required. Place into a bowl and pour the marinade over the goat meat, leaving to marinade over night.
Step 4: Place on the BBQ and cook over indirectly heat for 2 to 3 hours. With the left over marinade using the fresh Rosemary as a brush, brush onto the meat every 20 to 30 minutes. Leaving the last 30 minutes with out any basting.
Step 5: Remove from the BBQ and allow to rest for 20 mins.
Step 6: Serve and enjoy.
